Tikkas are authentic punjabi snacks that are prepared in the tandoor. A tikka is basically any vegetable, paneer or meat marinated in a highly flavourful seasoning and grilled to perfection. Here large chunks of paneer have been marinated in tangy marinade made of curds, chaat masala, kasuri methi, ginger and garlic and then cooked in the microwave. Paneer tikka can be as is with some chutney or can be rolled into a roti and served as a punjabi roll.

Makes 4 servings
2 cups paneer (cottage cheese) , cut into 50 mm. (2″) cubes
1/2 cup thick curds (dahi)
1 tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
2 tsp chilli powder
1/2 tsp dried fenugreek leaves (kasuri methi)
1/2 tsp garam masala
2 tbsp chopped coriander (dhania)
1 tsp chaat masala
1 tbsp besan (bengal gram flour)
1 tbsp oil
salt to taste
- Combine the curds, ginger paste, garlic paste, chilli powder, dried fenugreek leaves, punjabi garam masala, coriander, chaat masala, oil and salt and mix well to prepare a marinade.
- Add the paneer and keep aside to marinate for 15 minutes.
- Arrange the paneer pieces on the wire rack in a pre-heated oven at 200°c (400°f) and grill till the paneer is done (approx. 15 minutes).
- Remove from the oven and serve hot.
