This is an instant recipe that uses bread to thicken the rabdi almost instantly. It reduces the time and energy we spend laboriously stirring the milk till it thickens, it is also lower in fat content.
Preparation Time: 10 mins.
Cooking Time: 15 mins.
2 cups milk
2 bread slices
1/4 cup condensed milk
2 tbsp sugar
1/4 tsp cardamom (elaichi) powder
a few saffron (kesar) strands
- Remove the crusts of the bread slices and discard. Grind the bread slices in food processor to make fresh bread crumbs. Keep aside.
- Bring the milk to boil in a heavy bottomed pan. Add the fresh bread crumbs, condensed milk and sugar and cook on a high flame, while stirring continuously (approx. 10 minutes).
- Remove from the fire, add the cardamom powder and saffron and mix well.
- Refrigerate for 2 to 3 hours and serve chilled.
