Sopa De Milho Verde (Green Corn Soup)

Mexicans have used their popular ‘corn’ to make a mild corn soup flavoured with green onions.

Preparation Time: 10 min.
Cooking Time: 10 min.
Serves 6. 

Ingredients

Method
 

  1. Put the corn, milk and green onions in a mixer and blend into a smooth puree.
  2. Heat the butter and fry the flour for 1/2 minute.
  3. Add the corn mixture, 2 cups of water and salt and pepper and cook for 4 to 5 minutes.
  4. Serve hot.
