Sopa De Milho Verde (Green Corn Soup)
Mexicans have used their popular ‘corn’ to make a mild corn soup flavoured with green onions.

Cooking Time: 10 min.
2 cups boiled sweet corn kernels
2 cups milk
1 cup chopped spring onion whites and greens
4 tsp plain flour (maida)
1 tbsp butter
salt and black pepper (kalimirch) powder to taste
- Put the corn, milk and green onions in a mixer and blend into a smooth puree.
- Heat the butter and fry the flour for 1/2 minute.
- Add the corn mixture, 2 cups of water and salt and pepper and cook for 4 to 5 minutes.
- Serve hot.
